Creamy Italian Sausage and Tortellini Soup - Simple Seasonal

Ingredients

• 1 lb Sweet Italian sausage (out of it’s casings)
• 2 Tbsp butter
• 1 C chopped sweet onion
• 6 cloves minced garlic
• 1 1/2 tsp dried basil
• 1/3 C flour
• 1 14 oz can chopped fire roasted tomatoes, drained
• 1/2 C sun dried tomatoes, finely chopped
• 7 C chicken stock
• 16 oz pack fresh tortellini (found in the refrigerator section)
• 4 C spinach, coarsely chopped
• 1 C heavy cream
• 1/3 C grated parmesan
• slice parmesan for garnish
