French Onion Soup - Le-Thermique

Ingredients

• 2 large onions peeled & quartered
• 1 tbsp light olive oil
• 2 tbsp butter + 1 tsp extra
• Pinch of salt
• ½ tsp sugar
• 2 tbsp flour
• 1000 g beef stock or vegetable stock
• 250 ml dry white or red wine (omit for halal)
• ½ tsp ground sage
• 1 bay leaf
• Salt and pepper to taste
• Handful grated Swiss cheese
• 6 slices 1cm thick French bread
• 250 g Swiss cheese grated*
• 100 g parmesan cheese grated*
• Olive oil for drizzling
