Ingredients

• � cup Colavita Extra Virgin Olive Oil, more if needed
• � pound shiitake mushrooms, stems removed and sliced
• � pound button mushrooms, chopped
• 1 small yellow onion, chopped
• 2 cloves garlic, crushed
• Salt to taste
• Freshly ground black pepper to taste
• 1 bunch fresh thyme, or 2 teaspoons dried thyme
• 1 teaspoon fresh oregano or a pinch of dried oregano
• � cup white wine*
• 8 fresh plum tomatoes, peeled and diced
• 1 quart chicken stock
• 1 tablespoon Colavita white wine vinegar
• 1 tablespoon tomato paste
• � cup chopped fresh Italian parsley
