Ingredients
- 210g plain flour
- 400g granulated sugar
- 75g cocoa powder
- 2 tbsp espresso powder
- 1.5 tsp baking powder
- 1.5 tsp baking soda
- 1 tsp fine salt
- 2 eggs, beaten
- 230ml milk
- 1 tsp vanilla
- 230ml fresh brewed coffee
- 115ml neutral oil
- 200g granulated sugar
- 230ml water
- 80ml dark rum (or your alcohol of choice)
- 200g mascarpone
- 200ml double cream
- 2 tsp vanilla
- 3 tbsp icing sugar
- A blend of cocoa and espresso powder, for dusting
