- 4 tablespoons olive oil (divided)
- 3/4 teaspoon kosher salt
- 3/4 teaspoon pepper
- 1/2 teaspoon paprika
- 2 pounds boneless skinless chicken breasts (8 ounces each)
- 3 tablespoon shallots, minced (1 medium)
- 1/2 cup dry white wine
- 2 teaspoon tarragon, chopped (plus some leaves for sprinkling)
- 1 cup low- sodium chicken broth
- 1 teaspoon lemon juice
- 2 tablespoons unsalted butter (cold)
