Yai-Yai's Moussaka Recipe

Ingredients

• 3 eggplants
• 3 white potatoes
• olive oil
• 1 large onion
• 1 minced garlic clove
• 1 -1 1/2 teaspoon dried oregano
• 1/2 teaspoon salt
• 3/4 teaspoon black pepper
• 1/2-1 teaspoon cinnamon
• parmesan cheese (enough to sprinkle)
• feta cheese (enough to sprinkle)
• 1 -2 lb lean ground beef (preference)
• 6 -8 ounces tomato paste
• parsley (preference)
• 2 1/2 teaspoons butter
• 2 1/2 teaspoons flour
• 1 1/2 teaspoons salt
• 3 dashes nutmeg
• 3 dashes white pepper
• 2 cups whole milk
• 2 eggs
• 1 egg yolk
