• 1 ripe tomato
• 1 half onion
• 2 slices of melting cheese
• handful of baby spinach leaves
• 2 tbsp butter or cooking oil
• salt and pepper to taste
• thyme or other herbs you enjoy with melted cheese
• 2 slices whole wheat per sandwich
