Beet Salad

Ingredients

• Small beet cooked and chopped
• 2 cups iceberg lettuce
• 1/2 cup Arugula
• Hard boiled egg chopped
• 1/ 4 cup shredded carrot
• 2 Tbsp. Crumbled feta cheese
• Half of an apple chopped
• Citrus dressing (juice of one lemon or other citru plus a tsp. zest, 2 Tbsp. Olive oil, honey to taste, 1 tsp. mustard, 1 tsp. mayonna
• 1/4 cup sunflower and pumpkin seeds
