Rukmini Iyer Smoky Sausage Casserole Recipe | One Pan Stew

Ingredients

• 1 red pepper, thinly sliced
• 1 yellow pepper, thinly sliced
• 1 orange pepper, thinly sliced
• 1 red onion, roughly sliced
• 12 free-range pork chipolatas
• 100g chorizo from a ring, cut into 1½cm slices
• 3 sprigs of fresh rosemary
• 3 bay leaves
• 1 tbsp olive oil
• 1 tsp sea salt
• freshly ground black pepper
• 1 x 400g tin of haricot beans, drained
• 2 x 400g tins of chopped tomatoes
• 400ml boiling water
