Tomato Bruschetta | Appetizers | Kelchner's Horseradish

Ingredients

• 1 baguette, sliced on the bias, about 1/2 inch thick
• Extra-virgin olive oil
• Salt and pepper
• 1 1/2 tablespoons red wine vinegar
• 1 tablespoon honey
• 2 teaspoons chopped fresh thyme
• ½ cup chopped yellow pepper
• ½ cup chopped red pepper
• ½ cup sliced grape tomatoes
• 4 cup Kalamata olives, pitted and diced
• One 6-ounce log fresh goat cheese, at room temperature
• 2-3 tablespoons horseradish (add more to taste)
• Microgreens, for garnish
