Ingredients

• 3 cups (750 mL) zucchini, shredded
• 3 eggs
• 1/3 cup (75 mL) all-purpose flour
• 1/2 tsp (2 mL) salt
• 2 cups (500 mL) part-skim mozzarella cheese, shredded
• 2 small tomatoes, halved and thinly sliced
• 1/2 cup (125 mL) onion, chopped
• 1/2 cup (125 mL) green pepper, julienned
• 1 tsp (5 mL) dried oregano
• 1/2 tsp (2 mL) dried basil
• 3 tbsp (45 mL) Parmesan cheese, grated
