• 1 sweet onion, diced
• 2 red, green OR yellow bell peppers, diced
• 2 tablespoons butter
• 1/2-pound bag (or 2 cups) frozen corn
• 3 cups all-purpose flour
• 1-1/2 cups cornmeal, preferably stone-ground
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1/4 cup sugar
• 1 teaspoon salt
• 1 stick unsalted butter, melted
• 2 cups buttermilk
• 6 eggs
