Sticky date pudding from Winter Food by Jill Norman
A really sticky, rich pudding that originated at the Sharrow Bay Hotel in the Lake District.
Ingredients
- 2 eggs
- 75 g butter, plus extra for greasing
- 1 teaspoon bicarbonate of soda
- 175 g caster sugar
- 75 g demarara sugar
- 300 ml double cream
- 1 teaspoon vanilla extract
- 200 g dates, stoned and chopped
- 50 g butter
- 175 g self-raising flour
