Eric’s Texas-style Chili

Ingredients

• 2 1/2 pounds beef rib eye, fat trimmed and cut into 1 inch pieces
• 1 large onion, finely chopped
• 5 cloves garlic, minced
• 2 4.5-ounce cans chopped green chiles, drained
• 1 tablespoon ground cumin
• 4 tablespoons light chili powder
• 2 tablespoons paprika
• 1 28 oz. can diced tomatoes
• 1 14 oz. can beef stock
• 1 tablespoon sea salt
• 3 tablespoons brown sugar
• 1 tablespoon olive oil
• 1 tablespoon vegetable oil
