Zesty rosemary and lemon marinade for chicken or lamb - Vicki's Greek Recipes

Ingredients

• Marinade
• 2-3 fresh lemons, sliced
• 5-6 rosemary sprigs
• 4-5 them or lemon thyme sprigs
• 3 cloves garlic, sliced
• 300mls (1 1/2 cups) white wine or water
• 65mls (4 1/2 tablespoons) extra virgin olive oil
• 2-3 red chilli peppers (optional)
• salt and ground black pepper to season
• Meat
• 1.5Kg chicken (boneless, thighs or breast) or lamb (leg or shoulder)
