Ingredients

• For the base:
• 200 g Tennis biscuits, crushed
• 80 g desiccated coconut, toasted
• 125 g salted butter, melted
• For the filling:
• 2 x 250 g tubs cream cheese
• 1 x 398 g can condensed milk
• 2 free-range egg yolks
• 1/3 cup + 5 teaspoons fresh lemon juice
• 1 T lemon zest
• For the strawberry daquiri jelly topping:
• 125 g strawberries, sliced into rings
• 1 x 80 g packet strawberry jelly
• ½ cup hot water
• ½ cup Woolworths strawberry daiquiri drink concentrate
