• 1 small yellow onion, thinly sliced
• 1/2 small red bell pepper, thinly sliced

• 3 plum tomatoes, diced
• 1 avocado, diced
• 1/2 small red onion, diced
• 1/4 c. chopped cilantro
• 2 tsp lime juice
