Minestrone soup
Minestrone soup is an amazing soup filled with vegetables and macaroni. Very hearty classic Italian soup and ready in 30 minutes.
Ingredients
- 2 carrots
- 1/2 zucchini
- 2 stalks of celery
- 2 1/2 litre chicken stock
- 1 can of tomatoes (diced)
- 1 can of cannellini beans
- 1 onion
- 3 garlic cloves
- large handful of small elbow macaroni
- Olive oil
- pepper and salt to taste
