Banana Coconut Muffins

Ingredients

• Nonstick spray or paper muffin cups
• 2 cups All purpose flour
• 2 tsps Baking soda
• 1/2 tsp Salt
• 1/2 tsp Ground cinnamon
• 8 tbsps Unsalted butter, at room temperature
• 1 cup Sugar
• 2 large Eggs, at room temperature
• 3 large Ripe bananas
• 2 tbsps Milk or half-and-half
• 1 tsp Vanilla extract
• 1/2 tsp White vinegar
• 3/4 cup Sweetened shredded coconut
