Ingredients

• ¼ cup olive oil, divided
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 Tbsp tomato paste
• 1 tsp ground cumin
• ¾ tsp kosher salt, plus more to taste
• ½ tsp ground turmeric
• ½ tsp freshly ground black pepper, plus more to taste
• ⅛ tsp ancho chile powder, plus more to taste
• 1 quart vegetable stock
• ½ cup diced tomatoes, canned or fresh, and their juices
• 1 cup dried red lentils
• Juice of ½ lemon, plus more to taste
• 3 Tbsp Gelson’s organic mint, chiffonaded, for garnish
• Flake salt, for serving
