• Glaze:
• 30ml rum
• 2 cloves garlic (crushed)
• Juice of 2 limes
• Small handful fresh mint (chopped)
• 1 tsp cayenne pepper
• 2 tbs honey
• 30ml olive oil
• 1 small butternut squash (peeled and cubed)
• 2 red onions (peeled and quartered)
• 1 green pepper (deseeded and cut into 8)
• 2 tbs olive oil
• 200g cherry tomatoes on the vine
• 1 lime (halved)
