• 3-6 slices of your favorite rustic bread
• 6 large beets (or 9 small beets)
• 4 Tbsp. olive oil, divided
• 1/2 cup of parsley
• 1/2 cup of arugula
• 2 Tbsp. sunflower seeds
• 1.5 Tbsp. Silver Spring Foods Prepared Horseradish
• 1/2 cup creme fraiche
• 5 tsp. fresh squeezed lemon juice
• 1/2 tsp. salt
• 2 Tbsp. water
