• 4 to 5 medium carrots, peeled
• 3 cup all-purpose flour
• 1 tbsp baking soda
• 1 tbsp ground cinnamon
• 2 cup granulated sugar
• 1 tsp salt
• 1 1/2 cup vegetable oil
• 4 large eggs, lightly beaten
• 1 tbsp vanilla extract
• 1 1/2 cup walnuts (chopped)
• 1 cup shredded coconut
• 8 oz can crushed pineapple (225 g; drained)
• 1/3 cup brandy
• For the cream cheese frosting
• 12 oz Mascarpone cheese (350 g; at room temperature)
• 8 tbsp unsalted butter at room temperature
• 3 cup icing sugar (sifted)
• 1/2 cup chopped walnuts for garnishing (optional)
