Ingredients

• 1 cup of Mashed Potatoes
• 1 Large (or 2 medium) Russet potatoes, peeled, grated, soaked in cold water then squeezed well of any water.
• 1 cup of All Purpose Flour
• 1 tsp of Baking Soda
• 1 1/2 tsp of Salt (I use coarse kosher salt so if you are using fine salt then use half the amount)
• 3 Scallions, finely chopped
• Black Pepper to taste
• 1 1/4 cups of Buttermilk
• Olive Oil for cooking
