Bacon Mac and Beer Cheese

Ingredients

• 1 pound elbow macaroni
• 6 tablespoons butter
• 6 tablespoons all-purpose flour
• 1 cup beer (we used stout)
• 2 cups whole milk
• 1 tablespoon stone-ground mustard
• 1 tablespoon Worcestershire sauce
• 1 tablespoon garlic powder
• 1 pinch black pepper to taste
• 8 ounces extra-sharp cheddar grated
• 8 ounces Gruyere, Gouda, Fontina, or Jack cheese grated
• salt to taste
• 1 cup Panko breadcrumbs
• 2 tablespoons olive oil
• ½ tablespoon smoked paprika more to taste
• 2 tablespoons chives plus more to garnish
• 6 slices bacon crisped and crumbled
