Latticed Cherry Pie

Ingredients

• 3 cups all-purpose flour
• 3/4 teaspoon salt
• 10 tablespoons cold unsalted butter, cut into 8 pieces
• 12 tablespoons cold vegetable shortening, cut into 8 pieces
• 1 1/2 teaspoons vinegar
• 3 to 4 tablespoons ice water
• 1 3/4 lbs. pitted sweet cherries, pitted, Queen Ann, Bing
• 3/4 cup sugar
• 2 tablespoons all-purpose flour
• 1 teaspoon Kirsch
• 1 egg yolk
• 1 tablespoon milk
• 1 pint vanilla ice cream
