Pineapple Boat Salsa • La Tortilla Factory

Ingredients

• 1 whole pineapple
• 3 cups diced, seeded plum tomatoes
• 1 cup red onion, finely chopped
• 1/4 cup cilantro, finely chopped
• 1/4 cup jalapeño, finely chopped, seeds removed (adding seeds adds heat so choose carefully!)
• 3 tablespoons fresh lime juice
• A pinch of Kosher salt and black pepper
• Hot sauce to taste
