- 1 pound dried pasta (I used Cannolicchi pasta, but elbow pasta works well too)
- 1/2 cup unsalted butter (+ 2 TBSP for topping)
- 2 large yellow onions
- 1/2 cup flour
- 2 sprigs thyme, leaves removed
- 1 1/2 cup whole milk
- 1 1/2 cup half and half
- 16 oz aged Wisconsin cheddar (save a handful for the topping)
- 2 cups panko, or homemade breadcrumbs
- Kosher salt
- Optional: Truffle oil
