No-Bake Apple Pie Cheesecake - Diamond Nuts

Ingredients

• 2 tbsp unsalted butter
• 1/4 cup light brown sugar, packed
• 1 tbsp lemon juice, freshly squeezed
• 3 tbsp + 1 tbsp water
• 1 tsp pure vanilla extract
• 1/2 tsp cinnamon
• 1/4 tsp nutmeg
• pinch of salt
• 1/2 tbsp cornstarch
• 16 ounces full fat cream cheese, room temperature
• 1/3 cup + 1/3 cup white sugar
• 1-1/2 cups heavy whipping cream
• 1 batch apple pie filling (see recipe above)
