• 12 large shrimp, size 13/15, peeled and deveined
• 12 slices SunnyValley Hickory Smoked Thick Cut Bacon 12 oz
• 1 cup pineapple chunks (fresh or canned)
• 1 tbs. vegetable oil
• Toothpicks or skewers
• 1/2 cup soy sauce
• 1/4 cup pineapple juice
• 1/4 cup brown sugar
• 1 tbs. rice vinegar
• 1 tbs. grated fresh ginger
• 1 garlic clove, minced
• 1 tsp. sesame oil
• 1 tbs. cornstarch mixed with 1 tablespoon water (optional, for thickening)
• 1/2 cup mayonnaise
• 2 tbs. pineapple juice
• 1 tbs. soy sauce
• 1 tsp. honey
• 1/2 tsp. grated fresh ginger
