This is my rendition of the hottest appetizer in Baja. It's a great appetizer that takes the heat out of the peppers. In fact, I had an 80-year-old lady eat one and say, 'Oh my, this is the first time I have been able to eat a whole jalapeno.'

This fruity salsa is great with pita chips. You could use it to top salmon or your favorite grilled fish, steak, or pork chop. You can add pineapple for even more of a tropical flair. The possibilities for this recipe are endless!

This is the 'salsa de tomatillo' that I grew up with. It can be used as a sauce for grilled chicken, fish or shrimp, as the basis for green chilaquiles (pour over tortilla chips, shredded cooked chicken and shredded Monterey Jack, then heat under the broiler), and as a dipping sauce for chips. Delicioso!
