A baking steel is a thick food-contact steel plate preheated in an oven to deliver heat quickly to the base of pizza or bread. Its high heat transfer can produce rapid browning, so a method developed for a baking stone may need adjustment.
Follow the manufacturer's placement, cleaning and seasoning instructions. The plate stays hot long after baking, and its weight matters when choosing a rack. It is not the same as a thin sheet pan.
