Beef Stroganoff is a Russian dish of sautéed beef strips served in a sauce built on sour cream, mushrooms, and onions.

Its exact origin is disputed. The dish is generally traced to 19th-century Russia and is popularly, though not definitively, linked to the Stroganov noble family; it became widely popular in the United States in the mid-20th century.

High-quality beef such as tenderloin or sirloin is cut into strips or cubes, seared, then simmered in the sauce with mushrooms and seasonings like paprika and Dijon mustard. It's traditionally served over buttered egg noodles, though rice or mashed potatoes are common substitutes.

Variations swap in different mushroom varieties, add red wine, or substitute plant-based proteins in vegetarian versions.
