Bench Rest

Techniques

A bench rest is the pause between dividing or preshaping bread dough and giving it its final shape. The gluten relaxes so the dough can be stretched and shaped with less tearing or springing back. Keep it from drying into a skin.

The rest is usually shorter than bulk fermentation or the final proof. Its duration depends on dough strength and how tightly it was preshaped.
