Carryover cooking happens when heat stored in the outer parts of food continues moving inward after the food is removed from the oven, pan or grill. Its center temperature may keep rising during the rest. Larger foods and greater temperature differences can produce more carryover.
There is no universal number of degrees to subtract from a cooking target. Use a thermometer and the recipe's tested guidance, especially where safe cooking temperatures matter.
