Cheesecake

Dishes & Recipes

Cheesecake is a dessert made from a sweet filling of soft cheese, usually cream cheese, though some styles use ricotta or quark, combined with eggs and sugar and baked or set in a crust of graham crackers, cookie crumbs, or pastry. The modern cream-cheese version became popular in the United States after Philadelphia-brand cream cheese was introduced in 1872, though sweet cheese-and-honey cakes existed in antiquity, including a version said to have been served to athletes at the first Olympic Games in 776 BCE. Regional variations include Italian ricotta-based torta di ricotta, German käsekuchen, airy Japanese-style cheesecake, and no-bake versions set with gelatin instead of eggs.
