Cocoa Nibs

Cocoa nibs are small pieces of roasted, hulled cocoa beans, coarsely crushed but not further processed into chocolate. Unlike chocolate chips, they contain no added sugar or fat and don't melt when heated, giving them an intensely bitter, crunchy character closer to coffee than to sweetened chocolate. They're used as a garnish or textural addition in baked goods, granola, and savory rubs and sauces, and are ground further, with sugar and often milk, to become chocolate itself. Their bitterness pairs well with sweeter counterpoints like honey, dried fruit, or warm spices such as cinnamon.
