Coconut Vinegar

Coconut vinegar is a vinegar made by fermenting coconut sap, also called toddy, tapped from the flower buds of the coconut palm.

It originates in Southeast Asia and is produced mainly in the Philippines, Indonesia, and other Southeast Asian countries; Philippine coconut vinegar in particular is a staple in traditional Filipino cooking.

In Filipino cuisine it is fundamental to dishes like adobo and sinigang, and it is also used in sauces, dips, condiments, marinades, and salad dressings throughout Southeast and South Asia.

Its flavor is mildly sweet with a subtle coconut aroma and a gentle acidity, milder and less sharp than apple cider or white wine vinegar. It pairs well with garlic, ginger, chili peppers, and soy sauce, and it can balance the richness of grilled or roasted meats, seafood, and tofu.
