Corn Salsa

Dishes & Recipes

Corn salsa is a fresh, uncooked condiment of corn kernels combined with diced tomato, onion, cilantro, lime juice, and chile, similar in form to pico de gallo but built around corn instead of tomato as the main ingredient. It differs from Mexican street-corn preparations like elote and esquites, which are typically served warm with mayonnaise, cheese, and chili powder rather than as a raw, chopped salsa.

The corn is usually grilled or boiled first to bring out its sweetness, then cut from the cob and tossed with the other ingredients; no further cooking of the mixture is needed. It is served as a dip with tortilla chips, a taco or burrito bowl topping, or a side salad, and is easily varied with additions like avocado, jalapeño, or diced mango.
