Crème de Cacao

Crème de cacao is a chocolate-flavored liqueur made by infusing neutral spirits with cocoa beans, sugar, and usually vanilla.

It ranges from clear ("white") to dark brown depending on the style, and is typically 15-25% ABV. In the kitchen it's used to flavor chocolate desserts such as mousse, cakes, and truffles, drizzled over ice cream, or stirred into coffee or hot chocolate. It's a key ingredient in cocktails including the Grasshopper, the Brandy Alexander, and the White Russian.

Because crème de cacao is quite sweet, other added sugar in a recipe should usually be reduced when it's used.
