Freezer Fudge

Techniques

Freezer fudge, or no-bake fudge, is a fudge made by combining chocolate with sweetened condensed milk (and often butter or nuts), then chilling the mixture until it sets, without any stovetop cooking or candy thermometer. Its appeal is convenience and reliability: skipping the sugar-syrup cooking stage that trips up traditional fudge makes it accessible to cooks of any skill level. The result is very sweet and intensely chocolatey, with a firm, fudgy texture that holds up well for slicing, gifting, or folding into cookies, brownies, and cake layers. Variations swap in dark, milk, or white chocolate, or add vanilla, peanut butter, or dried fruit.
