Galbi, also spelled kalbi, is a Korean dish of beef short ribs cut across the bone into thin strips, marinated in a sweet-savory sauce of soy sauce, sugar, garlic, ginger, and often grated Asian pear, then grilled over charcoal or high heat. 'Galbi' literally means 'rib' in Korean, and the dish is commonly traced back to Korea's Three Kingdoms period, over a thousand years ago, though the marinated, grilled version familiar today developed more recently. It is typically grilled tableside at Korean barbecue restaurants and eaten wrapped in lettuce or perilla leaves with rice and ssamjang, alongside banchan such as kimchi. Galbi-jjim, a related but distinct dish, braises the same cut of short ribs in a soy-based sauce until tender rather than grilling it.
