Garlic Juice

Ingredients

Garlic Juice

Garlic juice is the liquid pressed or extracted from crushed fresh garlic cloves, a concentrated form of garlic's pungent, umami-rich flavor without the fibrous pulp. Because it is more concentrated than minced or crushed garlic, it is used in small amounts in marinades, dressings, dipping sauces, and dishes such as hummus, aioli, and salsas, where a clean garlic flavor is wanted without visible bits of garlic. It pairs well with acidic ingredients such as citrus, vinegar, and tomatoes, which help balance its intensity. Overuse can quickly overwhelm a dish, so it is best added a little at a time.
