'Green Zebra' is a striped heirloom-style tomato cultivar with green-and-yellow skin and green-tinged flesh, bred by tomato breeder Tom Wagner in Washington State and introduced in 1983 through selective crossing of striped tomato lines. It's medium-sized and slightly flattened, with a firm, juicy texture and a balanced sweet-tart flavor.
Its bright acidity and striking color make it popular in salads, salsas, and bruschetta, where it adds visual contrast to redder tomatoes. It holds up well to roasting, grilling, and sautéing, and works in dishes like ratatouille or tomato tarts.
Like other tomatoes, it's a source of vitamin C and the antioxidant lycopene, and it's a favorite at farmers' markets and among heirloom gardeners, though because it was bred so recently rather than passed down for generations, some growers debate whether it counts as a true heirloom.
