Hazelnut Butter

A smooth paste made from ground, usually roasted, hazelnuts with no added chocolate, distinct from hazelnut spread (such as Nutella), which is a hazelnut-and-cocoa confection, and from praline paste, which is made with caramelized sugar. Hazelnuts for the butter come mostly from Turkey, along with Italy, Spain, and the United States, chiefly Oregon. Its rich, nutty flavor, with notes of toasted nut and caramel, works in both sweet and savory contexts: as a spread for bread and pastries, an ingredient in cookies, cakes, and ice cream, or worked into marinades, dressings, and sauces for roasted meat, poultry, mushrooms, and root vegetables.
