Horchata is the name for several sweet, usually chilled drinks made from plant ingredients. The Valencian version, horchata de chufa, is made with tiger nuts, water, and sugar. Tiger nuts are tubers rather than tree nuts.

Mexican horchata commonly uses rice and cinnamon, sometimes with vanilla, milk, or other ingredients. Other regional versions use different grains, seeds, or nuts. The name alone therefore does not establish whether a drink contains dairy or a particular allergen.

Horchata is served as a refreshing drink, often over ice. Its flavor and thickness depend on the ingredients, how finely they are blended, and how the mixture is strained.
