Hummingbird Cake
Hummingbird cake is a popular Southern-style dessert whose name and recipe trace to a 1960s Jamaican tourism marketing campaign. The cake is named for Jamaica's national bird, the doctor bird (a hummingbird species); Jamaica's tourist board sent the recipe to American food editors in the late 1960s as part of a campaign promoting the island, and the cake reached wide popularity in the United States after a version was submitted to Southern Living magazine in 1978 by L. H. Wiggins of Greensboro, North Carolina. Ironically, it is not a cake traditionally eaten in Jamaica itself.
The cake is made by combining ripe bananas, crushed pineapple, cinnamon, and pecans or walnuts into a moist, dense batter. It is typically baked in layers and frosted with a rich cream cheese icing, though some variations use a simple dusting of powdered sugar instead.
The addition of pineapple and pecans or walnuts gives the cake a unique tropical flair that sets it apart from traditional banana cakes.
Hummingbird cake is prized for its complex flavor profile, which combines the sweetness of ripe bananas and pineapple with the warm spice of cinnamon and the crunch of toasted nuts. The cream cheese frosting provides a tangy counterpoint that balances the sweetness of the cake.
In the Southern United States, hummingbird cake is considered a quintessential comfort food and is often served at celebrations, potlucks, and family gatherings. It is particularly popular in the Carolinas, where it has become a regional specialty.
While the basic recipe for hummingbird cake remains relatively consistent, there are numerous variations that incorporate different ingredients or techniques. Some recipes call for the addition of coconut, while others use a combination of oil and butter in the batter. Some cooks prefer to toast the pecans or walnuts before folding them into the cake, while others leave them raw.
Hummingbird cake is a versatile dessert that can be enjoyed year-round, though it is particularly well-suited for warm-weather occasions. It pairs well with a variety of beverages, including coffee, tea, and even a light, fruity white wine.
Whether served as a decadent layer cake or a simple sheet cake, hummingbird cake is a beloved Southern classic that continues to delight and inspire home bakers and professional chefs alike.
