Marshmallow cream, often called marshmallow fluff after the best-known brand, is a soft, spreadable confection made by whipping sugar syrup with egg whites, giving it a sweet, vanilla-scented, very light texture. It was developed in the early 1900s and first sold commercially as Marshmallow Fluff by the Durkee-Mower company starting in 1917. Unlike solid marshmallows, it does not set, and it is used as a filling or spread rather than a discrete piece, most familiarly in fluffernutter sandwiches, s'mores, and fudge.
