Non-Stick
A surface coating applied to cookware, bakeware, and other culinary equipment to prevent food from sticking during cooking and baking is called non-stick. The most common non-stick coatings are made from polytetrafluoroethylene (PTFE), also known by the brand name Teflon. PTFE was accidentally discovered in 1938 by Roy Plunkett, a chemist working for DuPont; French engineer Marc Grégoire first applied it to cookware in the 1950s, and Teflon-coated pans reached the commercial US market by the 1960s.
The non-stick coating works by creating a smooth, slippery surface that food cannot easily adhere to. This prevents sticking, burning, and makes cleaning the cookware much easier. Non-stick surfaces are particularly useful for cooking delicate foods like eggs, pancakes, and fish, which have a tendency to stick to traditional uncoated cookware. They also work well for baking, as the non-stick properties help release baked goods without tearing.
In addition to PTFE, other non-stick coatings include ceramic, silicone, and enameled surfaces. Ceramic non-stick is a more recently developed alternative that uses a silicon-based coating rather than PTFE. Silicone is another non-stick option, often used for bakeware and utensils. Enameled cast iron cookware also has a naturally non-stick surface due to the glaze.
While non-stick cookware is widely used across cuisines, it does have some limitations. The coating can wear down over time, especially with heavy use or abrasive cleaning methods. Prolonged exposure to high heat can also degrade the non-stick properties. Some consumers also have concerns about potential health risks associated with PTFE, though research on the matter remains inconclusive. As a result, many manufacturers now offer PTFE-free non-stick options.
Proper care and use of non-stick cookware is important to maximize its lifespan and effectiveness. Gentle hand-washing, avoiding metal utensils, and limiting cooking temperatures to medium or below are recommended practices. With proper maintenance, non-stick cookware can provide a convenient and efficient cooking experience for a wide range of dishes.
