Nopalito is nopal, the paddle-shaped pad of the prickly pear cactus (Opuntia), cut into strips or diced, most often sold pickled, jarred, or canned rather than fresh. The name distinguishes the prepared, cut product from a whole fresh pad, though the two terms are often used interchangeably in casual cooking. Nopalitos are a staple of Mexican and Southwestern cooking, added to tacos, quesadillas, stews, salads, and omelets for their mild, grassy, faintly tart flavor and a texture similar to green beans or okra. They pair well with tomatoes, onions, garlic, cilantro, chili peppers, and tangy dairy such as queso fresco or sour cream, which helps balance the tartness. Opuntia cactus has been part of the Mexican diet for roughly 9,000 years, making it one of the oldest food plants used in the Americas.
